Spinach Stuffed Salmon

A delicious and healthy salmon dish stuffed with a creamy spinach filling, perfect for a nutritious dinner.

For the Crust:

  • 4 salmon fillets (6 oz each)
  • 2 cups fresh spinach, chopped
  • 1/2 cup cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp lemon zest
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix together spinach, cream cheese, Parmesan cheese, garlic, lemon zest, salt, black pepper, and red pepper flakes (if using).
  3. Cut a pocket into the side of each salmon fillet, being careful not to cut all the way through.
  4. Stuff each salmon fillet with the spinach mixture, pressing gently to seal the edges.
  5. Brush the outside of each fillet with olive oil and place on the prepared baking sheet.
  6. Bake for 20-25 minutes, or until the salmon is cooked through and flakes easily with a fork.
  7. Serve immediately and enjoy.

Notes

You can customize the seasonings to taste.
