Parmesan Crusted Chicken Sheet Pan Dinner

A delicious and easy one-pan meal featuring crispy Parmesan-crusted chicken with roasted vegetables.

For the Crust:

  • 4 boneless, skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 1 lb baby potatoes, halved
  • 2 cups broccoli florets
  • 1 tbsp lemon juice

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a sheet pan with parchment paper.
  2. In a shallow bowl, mix Parmesan cheese, breadcrumbs, garlic powder, oregano, salt, and pepper.
  3. Dredge each chicken breast in the Parmesan mixture, pressing to adhere. Place on one side of the sheet pan.
  4. Toss potatoes and broccoli with olive oil and lemon juice. Spread on the other side of the sheet pan.
  5. Bake for 25-30 minutes until chicken is cooked through and vegetables are tender.
  6. Serve immediately.

You can customize the seasonings to taste.
