For the Crust:
- 1 lb boneless, skinless chicken breasts, cubed
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 medium zucchini, sliced
- 1 medium yellow squash, sliced
- 1 bell pepper, diced
- 1 cup broccoli florets
- 1/2 cup chicken broth
Instructions
1. Prepare the Crust:
- Heat olive oil in a large skillet over medium-high heat.
- Add cubed chicken to the skillet and season with garlic powder, onion powder, paprika, salt, and pepper. Cook until browned, about 5-6 minutes.
- Add zucchini, yellow squash, bell pepper, and broccoli to the skillet. Stir to combine with the chicken.
- Pour in chicken broth, cover, and simmer for 10-12 minutes, or until vegetables are tender and chicken is fully cooked.
- Remove from heat and serve warm.
