For the Crust:
- 1 lb boneless, skinless chicken breasts, cubed
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 medium zucchini, sliced
- 1 medium yellow squash, sliced
- 1 red bell pepper, diced
- 1/2 red onion, sliced
- 1 cup cherry tomatoes, halved
- 1 tbsp fresh parsley, chopped
Instructions
1. Prepare the Crust:
- In a large skillet, heat olive oil over medium-high heat.
- Add cubed chicken and season with garlic powder, paprika, salt, and black pepper. Cook until browned, about 5-6 minutes.
- Add zucchini, yellow squash, bell pepper, and red onion to the skillet. Stir well and cook for 5-7 minutes until vegetables are tender.
- Add cherry tomatoes and cook for another 2 minutes.
- Garnish with fresh parsley and serve warm.
