One-Pan Honey BBQ Chicken Rice

A flavorful and easy one-pan meal featuring tender chicken, rice, and a sweet and tangy honey BBQ sauce.

For the Crust:

  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 2 tbsp honey
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1/2 cup frozen peas (optional)
  • 1/2 cup diced bell peppers (optional)

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large skillet over medium heat. Add chicken pieces and cook until lightly browned, about 5 minutes.
  2. In a bowl, mix together BBQ sauce, honey, garlic powder, onion powder, smoked paprika, salt, and pepper.
  3. Add rice to the skillet and stir to coat with any remaining oil. Pour in chicken broth and the BBQ sauce mixture, stirring to combine.
  4. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes or until rice is tender and liquid is absorbed.
  5. If using, stir in peas and bell peppers during the last 5 minutes of cooking.
  6. Remove from heat and let stand covered for 5 minutes before serving.

Notes

You can customize the seasonings to taste.
