A quick and healthy Mediterranean-inspired stir fry with ground beef, fresh vegetables, and bold flavors.

For the Crust:

  • 1 lb lean ground beef
  • 1 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • 1 small red onion, sliced
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1/4 cup crumbled feta cheese
  • Fresh parsley for garnish

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it apart with a spoon.
  2. Add red onion, bell pepper, zucchini, and garlic to the skillet. Stir-fry for 5-6 minutes until vegetables are tender-crisp.
  3. Season with oregano, cumin, smoked paprika, salt, and pepper. Stir well to combine.
  4. Remove from heat and sprinkle with crumbled feta cheese and fresh parsley before serving.
