For the Crust:
- 1 lb ground beef
- 6 slices bacon, cooked and crumbled
- 1/2 cup diced onion
- 1/2 cup diced pickles
- 1 cup shredded cheddar cheese
- 1/2 cup mayonnaise
- 1/4 cup sugar-free ketchup
- 1 tbsp mustard
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 large eggs
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and grease a 9×9 inch baking dish.
- In a skillet, brown the ground beef with onions over medium heat until fully cooked. Drain excess fat.
- In a large bowl, mix together the cooked beef, bacon, pickles, mayonnaise, ketchup, mustard, garlic powder, salt, and pepper.
- Spread the mixture evenly in the prepared baking dish.
- In a small bowl, whisk the eggs and pour over the casserole mixture.
- Sprinkle shredded cheddar cheese evenly on top.
- Bake for 25-30 minutes or until the cheese is bubbly and lightly browned.
- Let cool for 5 minutes before serving.
