Lasagna Soup

A comforting and flavorful soup that combines all the classic lasagna flavors in a bowl.

For the Crust:

  • 1 lb ground beef
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 (28 oz) can crushed tomatoes
  • 4 cups chicken broth
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes
  • 8 oz lasagna noodles, broken into pieces
  • 1/2 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. In a large pot, brown the ground beef over medium heat. Drain excess fat.
  2. Add the onion and garlic to the pot and sauté until softened, about 3 minutes.
  3. Stir in the crushed tomatoes, chicken broth, basil, oregano, and red pepper flakes. Bring to a boil.
  4. Add the broken lasagna noodles and simmer until tender, about 10-12 minutes.
  5. Season with salt and pepper to taste.
  6. Serve hot, topped with a dollop of ricotta cheese and a sprinkle of mozzarella.

Notes

You can customize the seasonings to taste.
