For the Crust:
- 1 lb ground beef
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp red pepper flakes
- 24 oz marinara sauce
- 4 cups chicken broth
- 8 oz lasagna noodles, broken into pieces
- 1/2 cup ricotta cheese
- 1/2 cup shredded mozzarella cheese
- 2 tbsp grated parmesan cheese
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- In a large pot, brown the ground beef over medium heat. Drain excess fat.
- Add onion, garlic, oregano, basil, and red pepper flakes. Cook until onion is softened.
- Stir in marinara sauce and chicken broth. Bring to a boil.
- Add broken lasagna noodles and simmer for 10-12 minutes, or until noodles are tender.
- In a small bowl, mix ricotta, mozzarella, and parmesan cheeses.
- Serve soup hot, topped with a dollop of the cheese mixture.
