Lasagna Soup – An Organized Chaos

A comforting and flavorful soup that captures all the deliciousness of lasagna in a bowl.

For the Crust:

  • 1 lb ground beef
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp red pepper flakes
  • 24 oz marinara sauce
  • 4 cups chicken broth
  • 8 oz lasagna noodles, broken into pieces
  • 1/2 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 tbsp grated parmesan cheese
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. In a large pot, brown the ground beef over medium heat. Drain excess fat.
  2. Add onion, garlic, oregano, basil, and red pepper flakes. Cook until onion is softened.
  3. Stir in marinara sauce and chicken broth. Bring to a boil.
  4. Add broken lasagna noodles and simmer for 10-12 minutes, or until noodles are tender.
  5. In a small bowl, mix ricotta, mozzarella, and parmesan cheeses.
  6. Serve soup hot, topped with a dollop of the cheese mixture.

Notes

You can customize the seasonings to taste.
