Hobo Casserole Rustic Ground Beef and Potato Bake

A hearty and comforting one-pan dish featuring ground beef, potatoes, and vegetables baked to perfection.

For the Crust:

  • 1 lb ground beef
  • 4 medium potatoes, thinly sliced
  • 1 onion, diced
  • 1 bell pepper, diced
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1/2 cup milk
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, brown the ground beef over medium heat. Drain excess fat.
  3. In a large bowl, mix the cream of mushroom soup, milk, garlic powder, paprika, salt, and pepper.
  4. Layer half the potatoes, onions, and bell peppers in a greased 9×13-inch baking dish. Top with half the ground beef and half the soup mixture. Repeat layers.
  5. Cover with foil and bake for 45 minutes. Remove foil, sprinkle cheese on top, and bake for another 15 minutes or until potatoes are tender.
  6. Let rest for 5 minutes before serving.

Notes
