For the Crust:
- 1 lb boneless, skinless chicken breast, diced
- 1 cup orzo pasta
- 2 cups chicken broth
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup grated Parmesan cheese
- 2 cups fresh spinach
Instructions
1. Prepare the Crust:
- Heat olive oil in a large skillet over medium heat. Add diced chicken and cook until browned and cooked through, about 6-8 minutes.
- Add minced garlic, oregano, salt, and black pepper to the skillet. Stir and cook for 1 minute until fragrant.
- Pour in orzo and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 10 minutes or until orzo is tender.
- Stir in fresh spinach and cook until wilted, about 2 minutes.
- Remove from heat and sprinkle with Parmesan cheese before serving.
