Heavenly Banana Walnut Cream Cake

A moist and flavorful banana cake with crunchy walnuts and a creamy frosting.

For the Crust:

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 3 ripe bananas, mashed
  • 1/2 cup chopped walnuts
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract (for frosting)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a bowl, whisk together flour, baking soda, and salt. Set aside.
  3. In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in mashed bananas, walnuts, and vanilla.
  4. Alternately add the flour mixture and buttermilk to the banana mixture, beginning and ending with the flour mixture. Mix until just combined.
  5. Pour batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted comes out clean. Let cool completely.
  6. For the frosting, whip heavy cream with powdered sugar and vanilla until stiff peaks form. Spread over the cooled cake and serve.
