For the Crust:

  • 1 lb flank steak, sliced thinly
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cooked brown rice
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 avocado, sliced
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • 1 lime, cut into wedges

Instructions

1. Prepare the Crust:

  1. In a bowl, mix the sliced steak with olive oil, cumin, chili powder, garlic powder, salt, and black pepper. Let it marinate for 10 minutes.
  2. Heat a skillet over medium-high heat. Cook the steak for 3-4 minutes per side until browned and cooked to your desired doneness.
  3. Assemble the bowls by dividing the cooked brown rice, black beans, corn, and steak among four bowls.
  4. Top each bowl with avocado slices, diced tomatoes, and chopped cilantro.
  5. Serve with lime wedges on the side for squeezing over the bowls.
