For the Crust:
- 1 lb ground turkey
- 2 medium sweet potatoes, diced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup chicken broth
- 2 cups baby spinach
- 1/4 cup chopped fresh parsley
Instructions
1. Prepare the Crust:
- Heat olive oil in a large skillet over medium heat. Add diced sweet potatoes and cook for 8-10 minutes, stirring occasionally, until slightly softened.
- Add onion and garlic to the skillet. Cook for 2-3 minutes until fragrant.
- Push vegetables to one side of the skillet. Add ground turkey and cook, breaking it apart with a spoon, until no longer pink (about 5-6 minutes).
- Stir in paprika, cumin, salt, and pepper. Pour in chicken broth and simmer for 2 minutes.
- Add baby spinach and cook just until wilted (about 1-2 minutes).
- Garnish with fresh parsley before serving.
