For the Crust:
- 1 lb boneless, skinless chicken breasts
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp dried oregano
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cups cooked brown rice or quinoa
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/4 cup kalamata olives, pitted and sliced
- 1/2 cup crumbled feta cheese
- 1/2 cup tzatziki sauce
Instructions
1. Prepare the Crust:
- In a bowl, mix chicken with olive oil, lemon juice, oregano, garlic powder, salt, and pepper. Let marinate for 10 minutes.
- Heat a skillet over medium-high heat. Cook chicken for 6-7 minutes per side until fully cooked. Let rest for 5 minutes, then slice.
- Divide cooked rice or quinoa among four bowls.
- Top each bowl with sliced chicken, cucumber, tomatoes, red onion, olives, and feta cheese.
- Drizzle with tzatziki sauce before serving.
