For the Crust:
- 1 lb cooked shrimp, peeled and deveined
- 2 ripe avocados
- 1 lime, juiced
- 1/4 cup red onion, finely diced
- 1/4 cup fresh cilantro, chopped
- 1 jalapeño, seeded and minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 bag tortilla chips
- 1/2 tsp garlic powder
Instructions
1. Prepare the Crust:
- In a medium bowl, mash the avocados with lime juice until smooth but slightly chunky.
- Stir in red onion, cilantro, jalapeño, salt, and black pepper. Set aside.
- Toss the cooked shrimp with garlic powder.
- Arrange tortilla chips on a serving platter. Spoon a dollop of guacamole onto each chip.
- Top each guacamole-covered chip with a shrimp.
- Serve immediately.
