Roasted Sweet Potatoes with Garlic and Parmesan

A simple and flavorful side dish featuring roasted sweet potatoes tossed with garlic and topped with Parmesan cheese.

For the Crust:

  • 2 large sweet potatoes, peeled and cubed
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss the sweet potato cubes with olive oil, minced garlic, salt, black pepper, and paprika until evenly coated.
  3. Spread the sweet potatoes in a single layer on the prepared baking sheet. Roast for 25-30 minutes, stirring halfway, until tender and golden brown.
  4. Remove from the oven and sprinkle with grated Parmesan cheese and chopped parsley. Serve warm.
