For the Crust:
- 2 large flour tortillas
- 4 oz cream cheese, softened
- 1 tbsp ranch seasoning mix
- 1/2 cup shredded carrots
- 1/2 cup thinly sliced red bell pepper
- 1/2 cup thinly sliced cucumber
- 1/2 cup baby spinach leaves
- 1/4 cup shredded purple cabbage
Instructions
1. Prepare the Crust:
- In a small bowl, mix the cream cheese and ranch seasoning until smooth.
- Spread the cream cheese mixture evenly over each tortilla.
- Layer the shredded carrots, red bell pepper, cucumber, spinach, and purple cabbage in rows across the tortillas.
- Roll the tortillas tightly, then wrap in plastic wrap and refrigerate for 30 minutes.
- Slice into 1-inch pinwheels before serving.
