For the Crust:

  • 2 large flour tortillas
  • 4 oz cream cheese, softened
  • 1 tbsp ranch seasoning mix
  • 1/2 cup shredded carrots
  • 1/2 cup thinly sliced red bell pepper
  • 1/2 cup thinly sliced cucumber
  • 1/2 cup baby spinach leaves
  • 1/4 cup shredded purple cabbage

Instructions

1. Prepare the Crust:

  1. In a small bowl, mix the cream cheese and ranch seasoning until smooth.
  2. Spread the cream cheese mixture evenly over each tortilla.
  3. Layer the shredded carrots, red bell pepper, cucumber, spinach, and purple cabbage in rows across the tortillas.
  4. Roll the tortillas tightly, then wrap in plastic wrap and refrigerate for 30 minutes.
  5. Slice into 1-inch pinwheels before serving.
