For the Crust:
- 1 lb smoked sausage, sliced
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 bell pepper, diced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp dried thyme
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Heat olive oil in a large skillet or pot over medium heat. Add sliced sausage and cook until lightly browned, about 5 minutes.
- Add diced onion, bell pepper, and garlic. Cook until vegetables are softened, about 3-4 minutes.
- Stir in rice, paprika, thyme, salt, and pepper. Cook for 1 minute to toast the rice slightly.
- Pour in chicken broth, bring to a boil, then reduce heat to low. Cover and simmer for 18-20 minutes until rice is tender and liquid is absorbed.
- Remove from heat and let sit covered for 5 minutes. Fluff with a fork before serving.
