One-Pot Smoked Sausage And Rice

A hearty and flavorful one-pot meal featuring smoked sausage, rice, and vegetables for an easy weeknight dinner.

For the Crust:

  • 1 lb smoked sausage, sliced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 bell pepper, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp dried thyme
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large skillet or pot over medium heat. Add sliced sausage and cook until lightly browned, about 5 minutes.
  2. Add diced onion, bell pepper, and garlic. Cook until vegetables are softened, about 3-4 minutes.
  3. Stir in rice, paprika, thyme, salt, and pepper. Cook for 1 minute to toast the rice slightly.
  4. Pour in chicken broth, bring to a boil, then reduce heat to low. Cover and simmer for 18-20 minutes until rice is tender and liquid is absorbed.
  5. Remove from heat and let sit covered for 5 minutes. Fluff with a fork before serving.
