For the Crust:
- 1 cup creamy peanut butter
- 1/4 cup unsalted butter, softened
- 1/2 teaspoon vanilla extract
- 2 cups powdered sugar
- 1/4 teaspoon salt
- 2 cups semi-sweet chocolate chips
- 1 tablespoon coconut oil
Instructions
1. Prepare the Crust:
- In a large bowl, mix together peanut butter, softened butter, vanilla extract, and salt until smooth.
- Gradually add powdered sugar and mix until fully combined. The mixture should be thick and moldable.
- Shape the mixture into egg-shaped pieces and place them on a parchment-lined baking sheet. Freeze for 20 minutes.
- In a microwave-safe bowl, melt chocolate chips and coconut oil in 30-second intervals, stirring until smooth.
- Dip each peanut butter egg into the melted chocolate, coating completely. Place back on the parchment paper.
- Let the chocolate set at room temperature or refrigerate for 15 minutes before serving.
