Falafel-Spiced Cucumber Bites

Crunchy cucumber rounds topped with a falafel-inspired spiced chickpea mixture for a fresh and flavorful appetizer.

For the Crust:

  • 2 medium cucumbers, sliced into 1/2-inch rounds
  • 1 cup cooked chickpeas, mashed
  • 1 tbsp tahini
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • 1 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1/4 tsp cayenne pepper
  • Salt to taste
  • 2 tbsp chopped fresh parsley
  • 2 tbsp crumbled feta cheese (optional)

Instructions

1. Prepare the Crust:

  1. In a bowl, combine mashed chickpeas, tahini, lemon juice, garlic, cumin, coriander, cayenne, and salt. Mix well.
  2. Arrange cucumber rounds on a serving platter.
  3. Top each cucumber round with about 1 teaspoon of the chickpea mixture.
  4. Garnish with chopped parsley and feta cheese if using.
  5. Serve immediately or chill for up to 1 hour before serving.

Notes

You can customize the seasonings to taste.
