For the Crust:
- 2 medium cucumbers, sliced into 1/2-inch rounds
- 1 cup cooked chickpeas, mashed
- 1 tbsp tahini
- 1 tbsp lemon juice
- 1 clove garlic, minced
- 1 tsp ground cumin
- 1/2 tsp ground coriander
- 1/4 tsp cayenne pepper
- Salt to taste
- 2 tbsp chopped fresh parsley
- 2 tbsp crumbled feta cheese (optional)
Instructions
1. Prepare the Crust:
- In a bowl, combine mashed chickpeas, tahini, lemon juice, garlic, cumin, coriander, cayenne, and salt. Mix well.
- Arrange cucumber rounds on a serving platter.
- Top each cucumber round with about 1 teaspoon of the chickpea mixture.
- Garnish with chopped parsley and feta cheese if using.
- Serve immediately or chill for up to 1 hour before serving.

You can customize the seasonings to taste.
