For the Crust:
- 1 lb ground lamb or beef
- 1 onion, diced
- 2 carrots, diced
- 2 cloves garlic, minced
- 1 cup frozen peas
- 1 tbsp tomato paste
- 1 cup beef or vegetable broth
- 1 tsp Worcestershire sauce
- 1 tsp dried thyme
- Salt and pepper to taste
- 4 large potatoes, peeled and cubed
- 4 tbsp butter
- 1/2 cup milk
- 1/2 cup shredded cheddar cheese (optional)
Instructions
1. Prepare the Crust:
- In a large skillet, brown the ground lamb or beef over medium heat. Drain excess fat.
- Add onion, carrots, and garlic to the skillet. Cook until vegetables are tender, about 5 minutes.
- Stir in tomato paste, broth, Worcestershire sauce, thyme, salt, and pepper. Simmer for 10 minutes, then add peas and cook for another 2 minutes. Set aside.
- Boil potatoes in salted water until tender, about 15 minutes. Drain and mash with butter and milk until smooth. Season with salt and pepper.
- To serve, spoon the meat mixture onto plates, top with mashed potatoes, and sprinkle with cheddar cheese if desired.
