Cowboy Soup

A hearty and flavorful soup packed with ground beef, beans, and vegetables, perfect for a comforting meal.

For the Crust:

  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 4 cups beef broth
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat.
  2. Add the onion, garlic, and bell pepper to the pot. Cook until vegetables are softened, about 5 minutes.
  3. Stir in the diced tomatoes, corn, kidney beans, pinto beans, and beef broth.
  4. Season with chili powder, cumin, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Taste and adjust seasonings as needed. Serve hot.

Notes

You can customize the seasonings to taste.
