Cottage Cheese Egg Bake

For the Crust:

  • 6 large eggs
  • 1 cup cottage cheese
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C) and grease a baking dish with olive oil.
  2. In a large bowl, whisk the eggs until well beaten. Stir in cottage cheese, cheddar cheese, bell peppers, onions, salt, and black pepper.
  3. Pour the mixture into the prepared baking dish and bake for 25-30 minutes, or until the eggs are set and the top is lightly golden.
