For the Crust:
- 6 large eggs
- 1 cup cottage cheese
- 1/2 cup shredded cheddar cheese
- 1/4 cup diced bell peppers
- 1/4 cup diced onions
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C) and grease a baking dish with olive oil.
- In a large bowl, whisk the eggs until well beaten. Stir in cottage cheese, cheddar cheese, bell peppers, onions, salt, and black pepper.
- Pour the mixture into the prepared baking dish and bake for 25-30 minutes, or until the eggs are set and the top is lightly golden.
