For the Crust:
- 1 lb cooked lobster meat, chopped
- 1/4 cup mayonnaise
- 2 tbsp unsalted butter, melted
- 1 tbsp lemon juice
- 1/4 cup celery, finely diced
- 1 tbsp fresh chives, chopped
- Salt and pepper to taste
- 4 New England-style hot dog buns
- 2 tbsp butter, for toasting buns
Instructions
1. Prepare the Crust:
- In a large bowl, combine lobster meat, mayonnaise, melted butter, lemon juice, celery, chives, salt, and pepper. Mix gently.
- Heat a skillet over medium heat and butter the insides of the hot dog buns.
- Toast the buns in the skillet until golden brown, about 2 minutes per side.
- Spoon the lobster mixture generously into each toasted bun.
- Serve immediately with extra lemon wedges if desired.
