For the Crust:
- 2 cups all-purpose flour
- 1/2 cup almond flour
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- 3/4 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1/2 cup strawberry jam
- Powdered sugar for dusting
Instructions
1. Prepare the Crust:
- In a bowl, whisk together flour, almond flour, cinnamon, and salt.
- In another bowl, beat butter and sugar until fluffy. Add egg and vanilla, mixing well.
- Gradually add dry ingredients to wet, mixing until dough forms. Divide dough in half, flatten into disks, wrap in plastic, and chill for 1 hour.
- Preheat oven to 350°F (175°C). Roll out dough to 1/4-inch thickness. Cut out heart shapes, then cut smaller hearts from half the cookies for the tops.
- Bake for 10-12 minutes until edges are golden. Cool completely.
- Spread jam on whole cookies, then top with cut-out cookies. Dust with powdered sugar before serving.
