For the Crust:
- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1 egg
- 1/4 cup milk
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp Worcestershire sauce
- 1 cup shredded cheddar cheese
- 2 cups mixed vegetables (carrots, bell peppers, zucchini)
- 1/2 cup ketchup
- 1 tbsp brown sugar
- 1 tsp mustard
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- In a large bowl, mix ground beef, breadcrumbs, egg, milk, garlic powder, onion powder, and Worcestershire sauce until well combined.
- Press the meat mixture evenly into the prepared baking dish.
- Spread ketchup, brown sugar, and mustard mixture over the meatloaf layer.
- Arrange mixed vegetables evenly over the top.
- Bake for 25 minutes, then sprinkle with shredded cheddar cheese and bake for an additional 5 minutes or until cheese is melted.
- Let rest for 5 minutes before serving.
