For the Crust:
- 1 lb flank steak
- 2 tbsp fish sauce
- 2 tbsp lime juice
- 1 tbsp brown sugar
- 1 tsp chili flakes
- 1 clove garlic, minced
- 1 small red onion, thinly sliced
- 1 cucumber, sliced
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh mint leaves
- 1/4 cup fresh cilantro leaves
- 1/4 cup roasted peanuts, crushed
Instructions
1. Prepare the Crust:
- Grill or pan-sear the flank steak to medium-rare, then let it rest for 5 minutes before slicing thinly against the grain.
- In a small bowl, whisk together fish sauce, lime juice, brown sugar, chili flakes, and minced garlic to make the dressing.
- In a large bowl, combine sliced beef, red onion, cucumber, cherry tomatoes, mint, and cilantro.
- Pour the dressing over the salad and toss gently to combine.
- Sprinkle crushed peanuts on top before serving.
