For the Crust:

  • 1 lb flank steak
  • 2 tbsp fish sauce
  • 2 tbsp lime juice
  • 1 tbsp brown sugar
  • 1 tsp chili flakes
  • 1 clove garlic, minced
  • 1 small red onion, thinly sliced
  • 1 cucumber, sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh mint leaves
  • 1/4 cup fresh cilantro leaves
  • 1/4 cup roasted peanuts, crushed

Instructions

1. Prepare the Crust:

  1. Grill or pan-sear the flank steak to medium-rare, then let it rest for 5 minutes before slicing thinly against the grain.
  2. In a small bowl, whisk together fish sauce, lime juice, brown sugar, chili flakes, and minced garlic to make the dressing.
  3. In a large bowl, combine sliced beef, red onion, cucumber, cherry tomatoes, mint, and cilantro.
  4. Pour the dressing over the salad and toss gently to combine.
  5. Sprinkle crushed peanuts on top before serving.
