For the Crust:
- 1 lb cooked shrimp, peeled and deveined
- 2 ripe avocados, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 2 tbsp lime juice
- 2 tbsp olive oil
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- In a large bowl, combine the shrimp, diced avocados, cherry tomatoes, red onion, and cilantro.
- In a small bowl, whisk together lime juice, olive oil, garlic powder, salt, and pepper.
- Pour the dressing over the salad and gently toss to combine. Serve immediately.
