For the Crust:
- 1.5 lbs red potatoes, quartered
- 3 tbsp olive oil
- 4 cloves garlic, minced
- 1 tsp dried rosemary
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
1. Prepare the Crust:
- Preheat oven to 425°F (220°C).
- In a large bowl, toss potatoes with olive oil, garlic, rosemary, thyme, salt, and pepper until evenly coated.
- Spread potatoes in a single layer on a baking sheet. Roast for 25-30 minutes, flipping halfway, until golden and crispy.
