For the Crust:
- 1 whole chicken (about 4–5 pounds)
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 lemon, halved
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C).
- In a small bowl, mix minced garlic, rosemary, thyme, olive oil, salt, and pepper to create a herb paste.
- Rub the herb paste all over the chicken, including under the skin.
- Place the lemon halves inside the chicken cavity.
- Place the chicken on a roasting rack in a baking dish and roast for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C).
- Let the chicken rest for 10 minutes before carving and serving.
