For the Crust:
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tablespoon lemon zest
- 2 tablespoons fresh lemon juice
- 1/2 cup buttermilk
- 1 tablespoon poppy seeds
- 1 cup powdered sugar
- 2 tablespoons fresh lemon juice
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
- In a bowl, whisk together flour, baking soda, baking powder, and salt.
- In a separate bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in lemon zest and juice.
- Alternately add the flour mixture and buttermilk to the butter mixture, beginning and ending with flour. Fold in poppy seeds.
- Pour batter into the prepared loaf pan. Bake for 45-50 minutes or until a toothpick inserted comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack. Mix powdered sugar and lemon juice to make the glaze, then drizzle over the warm bread.
