For the Crust:
- 4 large artichokes
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 1 lemon, juiced
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp red pepper flakes (optional)
Instructions
1. Prepare the Crust:
- Trim the tops and stems of the artichokes, then cut them in half lengthwise.
- Boil the artichokes in salted water for 15-20 minutes until tender.
- Drain and let cool slightly, then scoop out the fuzzy choke with a spoon.
- In a bowl, mix olive oil, garlic, lemon juice, salt, black pepper, and red pepper flakes.
- Brush the artichoke halves with the oil mixture.
- Grill over medium heat for 5-7 minutes per side until lightly charred.
- Serve warm with extra lemon wedges if desired.
