Greek Pasta Salad

A refreshing and tangy pasta salad with Mediterranean flavors.

For the Crust:

  • 8 oz penne pasta
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Cook the pasta according to package instructions. Drain and rinse under cold water.
  2. In a large bowl, combine the cooled pasta, cherry tomatoes, cucumber, red onion, and Kalamata olives.
  3. In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper. Pour over the pasta mixture and toss to combine.
  4. Gently fold in the feta cheese. Chill for at least 30 minutes before serving.

Notes

You can customize the seasonings to taste.
