For the Crust:
- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 3 tsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 3/4 cup milk
- 2 large eggs
- 1 tsp vanilla extract
- 2 cups fresh blueberries
- 2 cups heavy whipping cream
- 1/4 cup powdered sugar
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, whisk together flour, sugar, baking powder, and salt. Add softened butter, milk, eggs, and vanilla. Beat until smooth.
- Divide batter evenly between the prepared pans. Bake for 25-30 minutes or until a toothpick inserted comes out clean. Cool completely.
- Whip heavy cream and powdered sugar until stiff peaks form.
- Place one cake layer on a serving plate. Spread half the whipped cream over the top and sprinkle with 1 cup blueberries. Top with the second cake layer, remaining whipped cream, and remaining blueberries.
