For the Crust:
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tbsp curry powder
- 4 cups vegetable broth
- 1 cup coconut milk
- 1 cup all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup milk
- 2 tbsp butter, melted
- 1/4 cup fresh cilantro, chopped
Instructions
1. Prepare the Crust:
- Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until softened.
- Stir in curry powder and cook for 1 minute until fragrant. Pour in vegetable broth and coconut milk, bring to a simmer.
- In a bowl, mix flour, baking powder, and salt. Add milk and melted butter, stir until a dough forms.
- Drop spoonfuls of the dumpling dough into the simmering soup. Cover and cook for 15 minutes.
- Garnish with fresh cilantro before serving.
