Curry Dumpling Soup

A comforting and flavorful soup with tender dumplings in a rich curry broth.

For the Crust:

  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp curry powder
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1 tbsp butter, melted
  • Fresh cilantro for garnish

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until softened.
  2. Stir in curry powder and cook for 1 minute until fragrant.
  3. Pour in vegetable broth and coconut milk. Bring to a simmer.
  4. In a bowl, mix flour, baking powder, and salt. Add milk and melted butter, stirring to form a dough.
  5. Drop spoonfuls of dough into the simmering soup. Cover and cook for 15 minutes until dumplings are fluffy.
  6. Garnish with fresh cilantro before serving.

Notes
