For the Crust:
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tbsp curry powder
- 4 cups vegetable broth
- 1 cup coconut milk
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup milk
- 1 tbsp butter, melted
- Fresh cilantro for garnish
Instructions
1. Prepare the Crust:
- Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until softened.
- Stir in curry powder and cook for 1 minute until fragrant.
- Pour in vegetable broth and coconut milk. Bring to a simmer.
- In a bowl, mix flour, baking powder, and salt. Add milk and melted butter, stirring to form a dough.
- Drop spoonfuls of dough into the simmering soup. Cover and cook for 15 minutes until dumplings are fluffy.
- Garnish with fresh cilantro before serving.
