For the Crust:
- 1 lb cooked shredded chicken
- 8 small flour tortillas
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup salsa
- 1 tsp taco seasoning
- 1 tbsp olive oil
- 1/4 cup chopped cilantro
- 1/2 cup sour cream (optional for serving)
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Lightly grease a baking sheet with olive oil.
- In a bowl, mix the shredded chicken, salsa, and taco seasoning until well combined.
- Fill each tortilla with the chicken mixture and a generous amount of both cheeses. Fold the tortillas in half and place them on the baking sheet.
- Brush the tops of the tacos with olive oil and bake for 15-20 minutes, or until the tortillas are crispy and the cheese is melted.
- Garnish with chopped cilantro and serve with sour cream if desired.

You can customize the seasonings to taste.
