Corn Salsa

A fresh and zesty corn salsa perfect for chips, tacos, or as a side dish.

For the Crust:

  • 2 cups fresh or frozen corn kernels
  • 1 medium red bell pepper, diced
  • 1/2 red onion, finely diced
  • 1 jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

1. Prepare the Crust:

  1. In a large bowl, combine corn, red bell pepper, red onion, jalapeño, and cilantro.
  2. In a small bowl, whisk together lime juice, olive oil, salt, and black pepper.
  3. Pour the dressing over the corn mixture and toss gently to combine. Refrigerate for at least 30 minutes before serving.
