For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup melted butter
- 1/4 cup sugar
- 1 can (14 oz) coconut milk
- 1/2 cup sweetened condensed milk
- 1/4 cup lime juice
- 1 tbsp lime zest
- 1 tsp vanilla extract
- 1/4 tsp salt
- Whipped cream for garnish (optional)
- Toasted coconut flakes for garnish (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C).
- Mix graham cracker crumbs, melted butter, and sugar in a bowl. Press firmly into a 9-inch tart pan.
- Bake the crust for 10 minutes, then let it cool completely.
- In a blender, combine coconut milk, sweetened condensed milk, lime juice, lime zest, vanilla extract, and salt. Blend until smooth.
- Pour the filling into the cooled crust and refrigerate for at least 4 hours or until set.
- Garnish with whipped cream and toasted coconut flakes before serving if desired.
