For the Crust:
- 1 9-inch pie crust, unbaked
- 4 large eggs
- 1 cup granulated sugar
- 2 cups whole milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground nutmeg
- 1 cup shredded coconut
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C).
- In a large bowl, whisk together eggs and sugar until smooth. Gradually stir in milk, vanilla extract, and nutmeg.
- Sprinkle shredded coconut evenly over the bottom of the pie crust. Pour the custard mixture over the coconut.
- Bake for 45-50 minutes, or until the custard is set and a knife inserted in the center comes out clean.
- Let cool completely before slicing and serving.
