Cinnamon Roll Cheesecake Bars

A delicious fusion of cinnamon rolls and cheesecake in bar form, perfect for dessert or brunch.

For the Crust:

  • 2 cans refrigerated cinnamon roll dough
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1/4 cup butter, melted
  • 1/4 cup brown sugar
  • 1 tbsp ground cinnamon

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
  2. Unroll one can of cinnamon roll dough and press into the bottom of the pan to form a crust.
  3. In a bowl, beat cream cheese, granulated sugar, egg, and vanilla until smooth. Spread over the cinnamon roll crust.
  4. Unroll the second can of cinnamon roll dough and place over the cream cheese layer.
  5. Drizzle melted butter over the top, then sprinkle with brown sugar and cinnamon.
  6. Bake for 30 minutes or until golden brown and set. Let cool before cutting into bars.

You can customize the seasonings to taste.
