For the Crust:
- 1 lb boneless, skinless chicken breasts
- 1 cup white rice, cooked
- 1 avocado, diced
- 1 can (14 oz) diced tomatoes
- 4 cups chicken broth
- 1 tbsp chipotle peppers in adobo sauce, minced
- 1 tsp cumin
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 lime, juiced
- 1/4 cup fresh cilantro, chopped
Instructions
1. Prepare the Crust:
- In a large pot, bring chicken broth to a boil. Add chicken breasts and simmer for 15-20 minutes until fully cooked.
- Remove chicken from the pot and shred it using two forks. Return the shredded chicken to the pot.
- Add diced tomatoes, chipotle peppers, cumin, garlic powder, salt, and black pepper. Simmer for 10 minutes.
- Stir in cooked rice and lime juice. Simmer for another 5 minutes.
- Serve hot, garnished with diced avocado and fresh cilantro.
