Chipotle Chicken and Avocado Rice Soup

A hearty and flavorful soup with tender chicken, creamy avocado, and a hint of smoky chipotle.

For the Crust:

  • 1 lb boneless, skinless chicken breasts
  • 1 cup white rice, cooked
  • 1 avocado, diced
  • 1 can (14 oz) diced tomatoes
  • 4 cups chicken broth
  • 1 tbsp chipotle peppers in adobo sauce, minced
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 lime, juiced
  • 1/4 cup fresh cilantro, chopped

Instructions

1. Prepare the Crust:

  1. In a large pot, bring chicken broth to a boil. Add chicken breasts and simmer for 15-20 minutes until fully cooked.
  2. Remove chicken from the pot and shred it using two forks. Return the shredded chicken to the pot.
  3. Add diced tomatoes, chipotle peppers, cumin, garlic powder, salt, and black pepper. Simmer for 10 minutes.
  4. Stir in cooked rice and lime juice. Simmer for another 5 minutes.
  5. Serve hot, garnished with diced avocado and fresh cilantro.

Notes

You can customize the seasonings to taste.
